Our milk arrives at the Great Lakes Cheese plant! Upon arrival, the milk on the truck is tested again for antibiotic residue and bacteria. They want to ensure only high quality milk goes into the plant. Once the milk passes their tests, it is pumped into the silos.
The Great Lakes Cheese plant in Adams is known for their New York cheddar cheese. Almost all of the milk they buy goes to making New York cheddars. Their most well know is the Adams Reserve- a gold medal winner!
Great Lakes Cheese also provide New York cheddar to local grocery stores. The cheese is sold as the store brand. Great Lakes works with Wegman's, Price Chopper, Shop Rite and Hannaford. The cheese plant also produces a personal favorite of mine, Cheese Curd! Great Lakes sells the cheese curd wholesale to the Jeff Bulk Cheese Store, Lowville Producers Cheese Store and River Rat Cheese. So if you are ever eating a New York Cheddar or cheese curd you can thank our cows, as well as many other local cows, for their hard work!
